Serves 5
Ingredients:
- Crumble
- ½cup coconut oil
- 180g ground almonds
- 50g flaked almonds
- 1 tbsp cinnamon
- 1 tsp nutmeg or ginger
- 1½tsp vanilla extract
- 1 pinch sea salt
- Pears
- 1kg pears, cored and chopped
- 1 tbsp water, filtered
- ½ tsp orange zest, grated
Method
- Preheat the oven to 180C.
- Put the chopped pears and the water into a saucepan, cover with a lid and cook gently on a medium heat for approximately 8 minutes until softened but still retaining colour and bite.
- Butter the bottom of an 8×8 inch ovenproof dish and fill with the cooked pears.
- Use the saucepan to melt the coconut oil.
- Mix the rest of the crumble ingredients in a bowl and then add the melted coconut oil. Mix in with a fork until evenly distributed. Chill or freeze the topping if you have time.
- Distribute the topping mixture over the pear and bake until golden (20-30 minutes).
